Breakfast Tacos

Who says you can’t have tacos for breakfast? These corn tortillas are filled with scrambled eggs, black beans, bacon and cheese.

Yum!

INGREDIENTS

For 3 tacos:

  • 2 eggs

  • 1/2 can of Black beans

  • Lightly dried cilantro

  • Shredded cheddar cheese

  • 2 slices of bacon

  • TJs cilantro dressing

  • Salsa Verde

  • 3 Corn tortillas

RECIPE

  1. Heat beans over stop top on medium heat.

  2. Layer bacon in between 2 paper towels and microwave safe plate. Microwave in 30 sec increments until desired crispness is reached. I did about 3-4 times.

  3. Scramble eggs with a pinch of cilantro and shredded cheddar cheese. (These are both measured for taste, add as much or little as you want. I did about a tbsp of cheese and 1/2 tbsp of cilantro)

  4. Like bacon, place 3 tortillas on microwave safe plate in between paper towels. Microwave for 20 secs.

  5. Spread a little bit of cilantro dressing on each tortilla, then start layering with bacon, scrambled eggs, black beans, sass verde - and of course if wanted - more cheese, cilantro dressing, and cilantro. Enjoy!!

Top these tacos off with some 5 ingredient guacamole.
