VEGAN Green Goddess dressing
A lot of Tik-Tokers are making this delicious, tangy dressing. so I gave it a try with my own little twists! I topped my salad with a lemon pepper salmon for some protein and ohh boy… It was delish!
Sub out the salmon for a plant based protein, and this dish is vegan.
INGREDIENTS
1c basil (I used 1c of arugula & half the jar of dried basil ≈ 0.20oz)
1c spinach (I used spinach/kale mix)
1 small shallot
4 tbsp lemon juice
1/4c olive oil
1/4c walnuts
1/3c nutritional yeast
2tbsp apple cider vinegar
1tsp salt
honey (optional/to taste if too sour)
RECIPE
Blend all ingredients until smooth.
Dress a mix of arugula, kale, red cabbage, red onion, cucumber & tomato. Enjoy!
