VEGAN Green Goddess dressing

A lot of Tik-Tokers are making this delicious, tangy dressing. so I gave it a try with my own little twists! I topped my salad with a lemon pepper salmon for some protein and ohh boy… It was delish!


Sub out the salmon for a plant based protein, and this dish is vegan.

INGREDIENTS

  • 1c basil (I used 1c of arugula & half the jar of dried basil ≈ 0.20oz)

  • 1c spinach (I used spinach/kale mix)

  • 1 small shallot

  • 4 tbsp lemon juice

  • 1/4c olive oil

  • 1/4c walnuts

  • 1/3c nutritional yeast

  • 2tbsp apple cider vinegar

  • 1tsp salt

  • honey (optional/to taste if too sour)

RECIPE

  1. Blend all ingredients until smooth.

  2. Dress a mix of arugula, kale, red cabbage, red onion, cucumber & tomato. Enjoy!
