Chicken, Shrimp & Sausage Jambalaya

Filled up our bowls with hearty, flavor filled ingredients. Chicken, shrimp, and andouille sausage for the proteins. Green pepper, onion, celery and beans for the veggies. Added some Cajun spices and there ya have it - jambalaya!

INGREDIENTS

  • 1 green pepper diced

  • 1 sweet onion diced

  • 4 celery stalks diced

  • 1 can of black beans

  • 2 tbsp minced garlic

  • 1lb chicken breast (skinless, boneless, cubed)

  • 1.5 c shrimp (raw, deveined, de-shelled, thawed if frozen)

  • 12oz andouille sausage (cut in rounds)

  • 2 tbsp tomato paste

  • 1.5 c rice (I used basmati)

  • 3 c vegetable broth

  • 2 c diced tomatoes

  • 2 tbsp Cajun seasoning

  • 2 bay leaves

RECIPE

  1. In a large pot sauté garlic, peppers, onions, celery, and beans on medium high heat with a drizzle of olive oil until aromatic.

  2. Add in proteins, and tomato paste. Stir around to spread paste.

  3. Add rice and stir again.

  4. Pour in broth, diced tomatoes, Cajun seasoning, and bay leaves. Stir to mix everything.

  5. Lower temperature to medium-low heat, cover, and let simmer for 20 mins/until rice is fully cooked.

  6. Enjoy as is, or add some topping like shredded cheese, jalapeños and sour cream. Yum!
