Lemon Salmon Salad

If you’ve been following me for a while, then you know this is my umpteenth salmon dish. But, who’s counting? I took some easy, clean, pre-made ingredients to whip this up.

INGREDIENTS

  • 1 lb of salmon

  • 1 handful Spring mix salad mix

  • 1 packaged of Simple Truth whole grain, brown rice, quinoa, with ancient grains 90 second pack

  • 1 tbsp of garlic aioli

  • Lemon Pepper seasoning

  • 1 tbsp Private Selection Lemon and Olive Oil Vinaigrette

  • 1/2 handful of feta

RECIPE

  1. I prepped this one a little differently. I smeared some garlic aioli on top the raw fillets then seasoned with my go-to spice mix, lemon pepper. After that, into the oven it goes for 20 mins at 350°.

  2. The quinoa salad was made from @simpletruth4u whole grain brown rice w/ ancient grains. Pop that into the microwave for 90 secs and you have your starch.

  3. Mix the hot rice with a handful or two of spring salad mix to wilt it a little. Mix in 1tbsp of @pvt_selection Lemon and Olive Oil vinaigrette (my FAVORITE) and some feta.

  4. Plate the salad mix and top it off with the salmon. Viola! Enjoy! 😋
